I am sure that after all the holiday indulging we did in December that everyone is now looking for some light and healthy fare. The great thing is that these recipes will also be nice and quick to prepare. And with our busy schedules, who doesn’t like to get food on the table quickly?

These dishes may skimp on calories but they definitely don’t skimp on flavor! I was literally drooling as I was putting this round-up together. So if you will excuse me, I am off to my kitchen to cook up a dish or two! 😉
